Gelatin finings react with negatively charged elements such as Tannin in wines and juices to lower potent, undesirable flavors. Gelatin finings also work to add clarity to beers and wines. Clarification improves wines and fruit juices. The use of gelatin finings when bottle conditioning, allows brewers to remove more yeast than necessary to slow or cease fermentation in the bottle.
